This recipe for Instant Pot Jerk Chicken combines two of my favorite things: jerk flavoring and using the Instant Pot for dinner.

I first fell in love with Jamaican Jerk Chicken during our Jamaican vacation back in 2011. It’s pretty insane that it took me this long to consider making something similar at home.

Even though the jerk chicken I enjoyed in Jamaica was made on the grill, the Instant Pot delivers an authentic-tasting finished dish that doesn’t disappoint. Instant Pot Jerk Chicken before cooking #instantpot #recipes

For the most authentic flavor (read: spicy), don’t de-vein and leave a few seeds in the peppers. If you have a spice-sensitive family, however, de-vein and de-seed the peppers and your jerk chicken will be milder. It’s good with or without the spice! I do prefer a little kick, though.

I like to put the chicken pieces under the broiler after they cook in the Instant Pot to add some nice brown color, but this is optional.

Instant Pot Jerk Chicken Recipe

Instant Pot Jerk Chicken recipe

  • Yield: 8 servings

Ingredients

  • 4 pounds chicken, cut in 1-inch pieces
  • 1 large onion, cut into 8 pieces
  • 1 tablespoon fresh chopped ginger
  • 3 small hot chili peppers, de-veined and de-seeded, if you prefer
  • ½ teaspoon ground allspice
  • 2 tablespoons dry mustard
  • 1 teaspoon ground black pepper
  • 2 tablespoons red wine vinegar
  • 2 tablespoons soy sauce
  • 2 large cloves garlic, minced
  • 1/2 chicken broth

Instructions

  1. Combine all ingredients except chicken in a food processor or blender and process until liquified.
  2. Add chicken to the Instant Pot and top with sauce. Stir and close Instant Pot. Turn pressure valve to sealing and set manual pressure on high for 12 minutes.
  3. Do a quick release when pressure cooking time has elapsed.
  4. Remove chicken from Instant Pot and spread over a baking sheet lined with parchment paper or a silicone baking mat. Drizzle sauce over the chicken.
  5. Serve as is, or for a golden browned finish, set broiler to high and broil for 6-10 minutes, turning once, until chicken is nicely browned
  6. Serve and enjoy!

It’s Memorial Weekend here in the United States, which is the weekend that unofficially kicks off summer. I thought it would be the perfect time to do a round up of the best Happy Healthy Mama recipes for summer.

There are certain foods that are just meant for summer, and these healthy summer recipes will help you eat healthy food that still tastes delicious during my favorite season!

In a sea of sameness, this Shaved Vegetable Salad gets points for standing out. At most of your summer barbecues you’ll find pasta salads, you’ll find potato salads, and you might even find a green salad.

There’s a very good chance you’ll be the only one bringing a Shaved Vegetable Salad. And that’s a good thing. Be bold. Be different.

While this lovely salad works well for your summer barbecues and picnics, it works equally well as a quick, no cook, dinner side dish. We all can appreciate that on hot spring and summer days, no?

How do you make a Shaved Vegetable Salad? 

It’s really easy to make this salad and no special equipment is needed. If you have a vegetable peeler in your drawer, you can make a Shaved Vegetable Salad.

Take your vegetable peeler and shave long, thin strips of vegetables. You hold your vegetable length wise, and peel long strips. A lighter touch makes for thinner strips, pressing more firmly will result in thicker strips. You want that sweet spot where your shaved vegetables aren’t so thin they are breaking, but not so thick that they won’t bend and fold.

This Shaved Vegetable Salad is light and makes a lovely side dish that is easy to prepare!

Ingredients

  • 2 medium zucchini
  • 2 medium/large carrots
  • 3/4 teaspoon salt
  • 1/4  cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 1/2 tablespoons chopped fresh dill, plus extra for garnish, if desired
  • salt and pepper
  • 1/2 cup pecan pieces, roughly chopped

 

Instructions

  1. Using a vegetable peeler, shave the zucchini and carrot length-wise into thin strips. Place them in a large bowl and sprinkle with the salt. Toss to coat. Set the bowl aside.
  2. In a small bowl, whisk together the yogurt, lemon juice, vinegar, mustard, and fresh dill. If the dressing is too thick for your preferences, add water, 1 tablespoon at a time, until it is thin enough.
  3. In a small, dry skillet, toast the pecan pieces over medium heat until they are slightly darker and fragrant, a few minutes.
  4. Drizzle the dressing on the shaved vegetables, and gently toss to coat. Arrange the vegetables on a platter or shallow bowl. Season one more time with salt and pepper. Top with the toasted pecans and extra fresh dill, if using. Enjoy!

Last week, we were supposed to attend a family picnic for Meghan’s school.  In a bit of a rush, I whipped up this white bean salad to bring along.  Then, the storm clouds rolled in and the thunder and lightening put on a show that cancelled the picnic.

I ended up eating a giant bowl of this salad for dinner.  Then I had some more.  I kept thinking about it everyday since then, so I made it again for dinner a few days ago.

I will make this white bean salad again and again this summer, so I knew I had to share it with you.

White Bean Salad recipe

This is a quick and easy salad to throw together and is perfect if you are looking for a fresh and healthy addition to your Memorial Day weekend potluck.  (To my non-US readers, Memorial Day is always celebrated the last Monday of May, and is a day where we honor our fallen military service members.)

I pretty much think fresh basil can do no wrong.  This salad is bursting with fresh basil and it just reminds me of summer.  What a great salad to eat on the weekend that kicks off summer. I hope you enjoy this White Bean Salad as much as I do!

White Bean Salad

White Bean Salad recipe

This vegan, gluten-free, soy-free, and nut-free salad is quick to throw together, healthy, and full of flavor.  It’s a perfect party salad!

  • Cook Time: 0 minutes
  • Total Time: 10 minutes
  • Yield: 8 servings

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon black pepper
  •  2 (15 ounce) cans white kidney beans, drained and rinsed
  • 1 cup cherry tomatoes, halved or quartered, depending on their size
  • 1 large avocado, cut in half length-wise and then sliced
  • 1 cup packed basil leaves, chopped

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and garlic.  Set aside.
  2.  In a medium bowl, gently mix together the beans, tomatoes, avocado, and basil.  Drizzle the dressing on top and gently mix again to coat the salad.  Enjoy!

Notes

*This recipe originally called for half of an avocado and half of a cucumber. Over the years, I left the cucumber out and used a whole avocado more often than not. If you prefer, add some cucumber slices! It’s good either way.

Dessert hummus! It’s a thing! Chickpeas can basically do no wrong. I use them in energy balls, Buckeyes, cookies, and now, friends, dessert hummus.

A friend recently sent me a message asking if I could try to recreate the Brownie Batter Dessert Hummus she loves. The one that she buys in the store is Brownie Batter Hummus by Delighted by Hummus. I’m always up for a challenge so I gave it a try!

I bought a tub of the hummus and we all tested it as a sweet treat after dinner one night. It was definitely a hit with my family, even my husband Tim, who is decidedly anti-hummus.Brownie Batter Dessert Hummus recipe dipping a pretzelI set out to recreate the hummus as closely as I could, so I used the ingredient list on the tub as inspiration.

In the end, my version was very close to the commercial variety. I gave it to my family the day after they tested the store-bought without telling them it was a homemade version and guess what? They had no idea!

Let me show you how easy it is to make this Brownie Batter Dessert Hummus at home!

How to Make Brownie Batter Dessert Hummus

Step 1

First, you want to gently heat coconut milk, unsweetened cocoa powder, and coconut sugar over low heat. Whisk until the sugar is dissolved. Remove from heat, and add the coconut oil. Continue to whisk until the coconut oil melts into the mixture. Remove from heat and allow to cool.

Drain and rinse your can of chickpeas well. In a food processor, process until the chickpeas are completely broken down.

Step 3

Make sure to scrape down the sides of the bowl so everything is evenly incorporated.

Step 4

Chill in the refrigerator at least one hour before serving. If your Brownie Batter Dessert Hummus is too thick after chilling, you can stir in 1-2 tablespoons water or coconut milk to help thin it out.

  • 1/2 cup lite canned coconut milk
  • 1/3 cup coconut sugar
  • 1/3 cup good-quality cocoa powder
  • 1 tablespoon coconut oil
  • 1 (15 ounce) can chickpeas
  • 1/4 teaspoon salt

Instructions

  1. Gently heat coconut milk, unsweetened cocoa powder, and coconut sugar over low heat. Whisk until the sugar is dissolved. Remove from heat, and add the coconut oil. Continue to whisk until the coconut oil melts into the mixture. Remove from heat and allow to cool.
