Low Carb Unstuffed Cabbage Soup

If you love stuffed cabbage rolls but hate how tedious they are to prepare, give this Low Carb Unstuffed Cabbage Soup a try! Okay, then, let’s just add that to the list of food requests from my kids and we’ll basically be eating plain chicken every day. I’m exaggerating, but only a little.

Tim’s actually been eating a more low carb diet for close to a year, but lately I’ve been sneaking in more rice and grains into our dinners. He noticed, and asked me to stop. I’m flexible and want to respect his choices, so I’m helping him out as much as I can. Thus, my Unstuffed Cabbage Soup became Low Carb Unstuffed Cabbage Soup. Unstuffed Cabbage Soup recipe overhead closer shotI’m far from an expert on low carb eating, but I’ve been learning. Per serving, this soup has 15 total carbs, which makes it more “medium carb.” But the net carbs are 10, which, according to what I’ve been reading, makes it a low carb meal. 

All I did to make this lower carb was take out the rice and add riced cauliflower. Cauliflower is a nutritional star so it’s a great addition to your soup even if you don’t care about the carbs. This meal also is Paleo and Whole30 friendly, so if you’re following either of those diets, you’re good with this one!

This next part is important, so hopefully you’re still reading. Let’s just say you don’t care about carbs or Paleo-shmaleo or any of that. Let’s say you just want to eat homemade, good food. Well, this recipe is for YOU, too. It happens to fit into those dietary lifestyles, but what you really need to know is that this is just GOOD SOUP.

So even though I’m calling it “Low Carb Unstuffed Cabbage Soup” it could also be called “Really Good, Yummy Soup That You Should Make.”

You really should.

Low Carb Unstuffed Cabbage Soup

All the delicious flavors of Stuffed Cabbage Rolls, this Low Carb Unstuffed Cabbage Soup is an easier, lower carb version!

  • Cook Time: 30 minutes
  • Total Time: 1 hour
  • Yield: 8 servings

Ingredients

  • 1 pound lean ground beef (grass-fed if possible)
  • 1 yellow onion
  • 1 tablespoon minced garlic
  • 1/2 of 1 medium or large green cabbage
  • 4 cups riced cauliflower*
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh thyme leaves
  • 6 cups beef broth
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste

Instructions

  1. In a large soup pot, brown the ground beef over medium high heat, using a wooden spoon to break it apart.
  2. While the ground beef is cooking, roughly chop your onion.
  3. Add the onion and garlic to the pan and cook until softened, about 5 minutes.
  4. While the onion and garlic are cooking, roughly chop half of the cabbage head.
  5. Add the cabbage, riced cauliflower, salt, pepper, and thyme to the pot and stir until everything is well combined.
  6. Add the broth, tomato sauce, and tomato paste and stir well. Bring the mixture to a boil, and then reduce the heat and simmer until the cabbage is tender, about 30 minutes.
  7. Taste and add more salt and pepper if needed. Enjoy!

Notes

*You can buy riced cauliflower in the produce section of most well-stocked grocery stores to save time. Alternatively, you can make your own by pulsing 1/2 of a large head of cauliflower, cut into florets, in the food processor until it resembles rice.

It is cold outside and the snow just keeps coming.  I am trying to embrace the season with the classic foods and drinks that scream winter, like soups, meals made with seasonal vegetables, and of course, hot cocoa.  Homemade Peppermint Hot Cocoa Recipe-made without refined sugar

What would a snowy winter be without being able to come in from the cold and enjoy a mug of hot cocoa?  When I was growing up, having hot cocoa meant ripping open a package, pouring in some water, and heating it up in the microwave.  As a child, there was no thought that went into what I might be drinking.

Now, as a mom, I have to make the decision between convenience and knowing (and feeling good about) the ingredients.  A popular instant hot cocoa packet has the following ingredient list:

SUGAR, CORN SYRUP SOLIDS, VEGETABLE OIL (PARTIALLY HYDROGENATED COCONUT OR PALM KERNEL AND HYDROGENATED SOYBEAN), DAIRY PRODUCT SOLIDS, COCOA PROCESSED WITH ALKALI, AND LESS THAN 2% OF CELLULOSE GUM, NONFAT MILK, SALT, SODIUM CASEINATE, SODIUM CITRATE, DIPOTASSIUM PHOSPHATE, SODIUM ALUMINOSILICATE, MONO- AND DIGLYCERIDES, GUAR GUM, ARTIFICIAL FLAVORS.

I have to choose between all of ^^^those^^^ ingredients and the list in a cup of homemade hot cocoa, which includes: nondairy milk, unsweetened cocoa powder, a natural liquid sweetener, and peppermint oil extract.  

close up of Homemade Peppermint Hot Cocoa RecipeI can have this Homemade Peppermint Hot Cocoa recipe made in almost the same amount of time, so really, there’s no question which one I’m going to choose.  I don’t need refined sugar to be the number one ingredient in my hot chocolate, and I don’t want corn solids, hydrogenated oils, and other chemicals that I don’t know enough about in there, either.

I included just a drop of peppermint oil extract in my hot cocoa because I’ve been craving the combination of mint+chocolate, but you can leave it out for a classic, no-refined-sugar hot chocolate treat.  The recipe is for one mug, but you can easily double, triple or quadruple the recipe to make enough for your family.overhead shot of Homemade Peppermint Hot Cocoa Recipe

Use unsweetened almond milk, a natural liquid sweetener, unsweetened cocoa powder, and peppermint extract to make a healthier Homemade Peppermint Hot Cocoa!

  • Total Time: 5 minutes
  • Yield: 1 cup

Ingredients

  • 1 cup milk (I used almond milk, any kind of milk will do the job)
  • 1 1/2 tablespoon unsweetened cocoa powder
  • 1 1/2-3 tablespoons liquid sweetener of choice (maple syrup, agave nectar, or honey all work well)
  • 1 drop peppermint extract

Instructions

  1. In a small bowl, combine the cocoa powder and sweetener and stir until they are combined.  Set aside.
  2.  Put the milk in a small sauce pan over medium low heat.  Stir in the chocolate mixture and heat until steaming.  Add the drop of peppermint extract. Enjoy!

Do you have an Instant Pot? I bought mine almost exactly one year ago, and at first it sat in the box. It was a bit intimidating and I wasn’t sure what to do with it. Eventually, I unboxed it and started experimenting. Now, I use it every week.

Is anyone asking themselves “What is an Instant Pot?” If so, let me get you up to speed.

An Instant Pot is a device that combines an electric pressure cooker, slow cooker, rice cooker, and yogurt maker all in one handy unit. It’s easier to use than a traditional pressure cooker–just press a few buttons and you’re good to go. It’s very user-friendly, which probably attributes to its growing a cult following in the last year or so.

Even though I use it often, it’s mostly for a few staple recipes that I love. I make a whole chicken in there almost weekly and started using it for my bone broth as well. You can cook a whole chicken in less than an hour. It’s a game-changer! It’s so much cheaper to buy a whole chicken and then you’ve got cooked chicken ready to go for quick and healthy lunches or dinners.

I also love my Creamy Instant Pot Lentils and make those often, too.

I decided, though, I need to keep expanding my healthy Instant Pot recipes repertoire. So I did some searching and found almost one hundred healthy Instant Pot recipes! I’ll be using my Instant Pot every day! I hope you will, too.

Chocolate Covered Apple Turkey Pops

I’m not really a fun food kind of mom. It’s not because I have anything against turning food into something creative. Actually, I see fun food creations and I think, “Oh, I should do that.”

But then, I never do.

There are probably a couple of factors at work here. One, I lack the patience for it. I use it all up on my family and preparing all the homemade food I already make. More work? No patience.

The second factor is my own insecurities. Every time I actually try to turn food into something cute and fun I feel like it looks like a second grader did it. Pinterest failures? I could be the head of that class.

I’m a failure as a mother.

So. Much. Excitement. They loved these before they even tasted them. And after they tasted them they loved them even more. Suddenly, I felt like a million bucks. How to Make Chocolate Covered Apple Turkey Pops

  1. Slice your apples thickly. You want to make sure each apple slice is thick enough that it can accommodate a stick and not break or split. Pick out the seeds as best you can.

2. Now you add sticks to the apple slices.

3. Next you want to melt your chocolate. Once it is melted, stir in the coconut oil and 6 scoops of MegaFood Kids Daily Immune nutritional booster powder.

  • 1 1/2 teaspoons coconut oil

  • 2 large apples, sliced thick
  • ~1/4-1/2 cup sliced almonds
  • 16 white chocolate chips

Instructions

It might seem dramatic to call these dinner rolls perfect or life-changing, but I’d never throw those terms around if I didn’t think it was true. Once you make these Perfect Bread Machine Dinner Rolls, you’ll only want these at your holiday dinners. No popping open a can, no store-bought funny business, nothing but these.

I’ve been making these Bread Machine Dinner Rolls for years now, but I’ve never considered sharing the recipe here. It doesn’t exactly fit in with the Happy Healthy Mama theme of healthier recipes.

A big part of living a happy, healthy life is living with balance, practicing moderation, and enjoying food. So let’s talk about these rolls!

I make them in the bread machine (aff link) using the dough cycle, but in the recipe I’ll also include directions to make them without a bread machine if you don’t have one. Either way, while these take a long time, most of the time is hands off. It’s definitely a quicker and easier with the bread machine, so you might want to get one!! 😉

These are super easy to make. You just need to start early because you aren’t going to have these perfect dinner rolls in an hour. Perfection takes time, kids.

You start by putting the ingredients in the order listed into the bread machine and set it to the dough cycle. One hour and thirty minutes later, the bread machine magically makes perfect dough. Every time.  Perfect Bread Machine Dinner Rolls--the dough in the bread machine

Cut the dough in half and roll it into two nine inch rounds. This dough is SO easy to work with and it’s forgiving also.

Take each triangle and roll it up, crescent style.

Now you’re going to cover the rolls and let them rise for two hours. (Remember, perfection takes time….) Perfect Bread Machine Dinner Rolls--crescent style rolls covered with a towel to rise

If your house is freezing, put them in a warm place.

After two hours, they will have risen nicely. Now they’re ready to bake.

You can brush them with melted butter before baking or not. Your choice. For these pictures, I did not. I brushed them with melted butter after they came out of the oven. In the video you’ll see below, I brushed them before.

I can’t even tell you how much these rolls are adored by all who try them. They are light, fluffy…perfect.

I have to note that when I made these for the video, I had a last-minute schedule change and wasn’t able to bake them when I should have, so they had too much rise time. (Heeeelllllooo puffy rolls!) You can see that in the video they aren’t as perfect-looking as these pictures (two different days). But when I say this dough is forgiving I mean it! These still tasted absolutely perfect.

I didn’t create this recipe myself. This is one of those recipes that lives on the Internet in varying, but close, forms in different places, including All Recipes and Genius Kitchen. I tried to find the original creator, but it seems this is one that comes from someone’s grandma’s neighbor’s great aunt. The best kind of recipes, no? These are PERFECT Bread Machine Dinner Rolls–you will never go back to the cans of crescent roll dough!

  • Cook Time: 12 minutes
  • Total Time: 4 hours 12 minutes
  • Yield: 16-24 rolls

Ingredients

  • 1 cup warm milk
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 4 cups flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1/4 ounce active dry yeast or 2 1/2 teaspoons instant yeast

Instructions

Bread Machine Instructions

  1. Place the ingredients in the bread machine in the exact order listed (important). Set the bread machine to the dough cycle.
  2. When the dough is ready, divide it in half.
  3. Roll each half into a 9 inch round circle.
  4. Cut each circle into 8 or 12 pie-shaped wedges. 8 will yield large rolls, 12 will yield medium-sized rolls.
  5. Starting with the wide end, roll up each wedge and place on a greased baking pan.
  6. Cover with a cloth and let rise about 2 hours, until the rolls have doubled in size.
  7. Bake at 350 degrees for 12 minutes.

Without Bread Machine Instructions

  1. In a large bowl, mix together yeast, milk, and sugar. Let stand for 30 minutes.
  2. Mix eggs, butter, and salt into yeast mixture.
  3. Mix in flour, 2 cups at a time.
  4. Cover with wax paper and let dough stand at room temperature overnight.
  5. In the morning, divide the dough in half.
  6. Roll each half into a 9″ round circle.
  7. Cut each round into 8 or 12 pie-shaped wedges.
  8. Roll up each wedge starting from wide end.
  9. Place on greased cookie sheets and let stand until ready to bake.
  10. Bake at 350 for 12 minutes.

Butter and Herb Roasted Turkey Breast

This Butter and Herb Roasted Turkey breast is moist, flavorful, and perfect for your small holiday gathering!

  • Yield: 6-8 servings

Ingredients

  • 1 whole bone-in turkey breast, 6 1/2-7 pounds
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh rosemary leaves
  • 1 tablespoon chopped fresh sage leaves
  • 1 tablespoon chopped fresh thyme leaves
  • 2 teaspoons coarse salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons melted butter
  • 3 tablespoons fresh lemon juice
  • 1 cup dry white wine

Instructions

  1. Preheat the oven to 325 degrees.
  2. Place the turkey, skin side up, on a rack in a roasting pan.
  3. In a small bowl, combine the garlic, rosemary, sage, thyme, salt, pepper, melted butter, and lemon juice. It should form a paste that isn’t super thick.
  4. Gently pull the skin up from the breast, and use your fingers to spread half of the paste under the skin onto the meat. Spread the remaining paste onto the skin.
  5. Pour the wine into the bottom of the roasting pan.
  6. Roast the turkey for 1 3/4-2 hours, until the internal temperature reaches 165 degrees.
  7. When the turkey is done, allow it to rest at room temperature for 15 minutes. Slice and serve with the juices from the pan. Enjoy!
