These Cranberry White Chocolate Chip Oatmeal Cookies are a festive twist on traditional oatmeal cookies! Add these to your Christmas Cookie baking list!
If you follow Happy Healthy Mama, I have to assume you’re interested in healthy eating. Fair assumption, right? So I’m really curious: What’s your stance on Christmas cookies? Do you only make 100% healthy Christmas cookies, like these No-Bake Gingerbread Cookies or do you totally ignore your healthy intentions for the month of December and just bake the real thing?
I fall somewhere in the middle of those two extremes. I like to make healthy treats around the holidays, like these No-Bake Chocolate Peppermint Energy Balls and these Skinny Buckeyes with Chickpeas, and these healthier Peanut Butter Snowballs. But, I must admit, we do like to occasionally enjoy full-on white flour, white sugar, no redeeming qualities treats. It happens.
The last category, of course, are the cookies and treats I healthify just a little. That’s where these Cranberry White Chocolate Chip Oatmeal Cookies fall. They aren’t low calorie, low carb, low sugar, low fat, or low anything. But I did make a few tweaks to make a favorite old fashioned oatmeal cookie recipe a little bit healthier. Here are the changes I made to this recipe:
- Instead of all-purpose flour, I used whole wheat pastry flour. That adds 4X the amount of fiber!
- Instead of brown sugar, I used coconut sugar. Coconut sugar contains inulin (a type of fiber) which some studies have shown to help slow the absorption of glucose. It also contains some vitamins and minerals, including iron and zinc.
- I use pastured butter instead of regular butter. Butter made from the milk of grass-fed cows is shown to be significantly higher in fatty acids and fat-soluble vitamins than that of butter made from grain-fed cows.
Who knew I could sneak so much nutritional information into a post about Christmas cookies?!
Lastly, instead of the raisins and nuts you’d typically find in old-fashioned oatmeal cookies, I gave these a holiday twist by using dried cranberries and white chocolate chips. Festive!

These are classic oatmeal cookies with a holiday twist! Perfectly soft and chewy, these are a favorite Christmas cookie.
- Prep Time: 25 minutes
- Cook Time: 10 minutes
- Total Time: 35 minutes
- Yield: 2 dozen cookies
Ingredients
- 1 1/2 cups whole wheat pastry flour (AP flour may be substituted)
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 2 sticks unsalted butter, at room temperature
- 1 cup coconut sugar
- 1/4 cup sugar
- 2 large eggs
- 1 1/2 teaspoons pure vanilla extract
- 2 3/4 cups old-fashioned rolled oats
- 1 cup dried cranberries*
- 1 cup white chocolate chips*
Instructions
- Position the racks in the top and bottom thirds of the oven. Preheat the oven to 350 degrees.
- In a medium bowl, whisk the flour, baking soda, cinnamon, and salt. In a large bowl, using an electric mixer on medium-high, beat the butter, coconut sugar, and regular sugar until creamy. Stop occasionally to scrape down the sides of the bowl; total time is about 2 minutes. Add the eggs and vanilla; beat again to blend, about 1 minute, stopping to scrape down the bowl if necessary. Add the flour mixture and beat on low just to blend. Add the oats, dried cranberries, and white chocolate chips and beat just to blend.
- Using a 2-inch (scant 3 tablespoon) cookie scoop, scoop the dough onto two parchment or silicone baking mat lined baking sheets, about 2 inches apart.
- Bake in the 350 degree oven until golden brown, about 10-12 minutes. Rotate the sheets and reverse the top and bottom racks half way through baking. Transfer the cookies to a wire rack; allow to cool. Enjoy!
Notes
*I like to reserve 1/4 cup of the dried cranberries and white chocolate chips to sprinkle on top near the end of the baking time. If you don’t do this, some of the cookies will be totally brown. They will be equally delicious, but just not as festive looking.
