Do you have an Instant Pot? I bought mine almost exactly one year ago, and at first it sat in the box. It was a bit intimidating and I wasn’t sure what to do with it. Eventually, I unboxed it and started experimenting. Now, I use it every week.

Is anyone asking themselves “What is an Instant Pot?” If so, let me get you up to speed.

An Instant Pot is a device that combines an electric pressure cooker, slow cooker, rice cooker, and yogurt maker all in one handy unit. It’s easier to use than a traditional pressure cooker–just press a few buttons and you’re good to go. It’s very user-friendly, which probably attributes to its growing a cult following in the last year or so.

Even though I use it often, it’s mostly for a few staple recipes that I love. I make a whole chicken in there almost weekly and started using it for my bone broth as well. You can cook a whole chicken in less than an hour. It’s a game-changer! It’s so much cheaper to buy a whole chicken and then you’ve got cooked chicken ready to go for quick and healthy lunches or dinners.

I also love my Creamy Instant Pot Lentils and make those often, too.

I decided, though, I need to keep expanding my healthy Instant Pot recipes repertoire. So I did some searching and found almost one hundred healthy Instant Pot recipes! Updated to add: I’ve been using this list and updating it, and it now has over 100 healthy Instant Pot Recipes!

I’ll be using my Instant Pot every day! I hope you will, too.

So, are you coming out of your sugar coma yet? I’m not here to preach…I’m in the exact same boat as you are. What can I say? I love Christmas cookies as much as you.

I firmly believe that there is room inside the healthy living bubble for indulging. It can’t be all quinoa salad all the time.

To Luke on his 7th Birthday

Luke Dawson turns 7

Dear Luke Dawson,

You are 7 today! I can hardly believe it. I remember the day you were born like it was yesterday, when you came fast and furious into this world.

I want you to know how very proud of you Daddy and I are. You are different than any kid I’ve ever known and I just know you are going to do big, big things someday. Nobody influences the world by being exactly like it.

I am proud and in awe of your incredible mind and the way you can solve problems and remember everything. I wish you wouldn’t be so hard on yourself, though. I hope you’ll learn to give yourself some grace; room to make mistakes and the ability to see mistakes as opportunities for growth. It’s hard; I know.

But I do know you’re listening to your parents and you’re growing. Just this morning I heard you say to your sister, when you two were talking about if you could get 1,000 bounces on your new Master a Million bounce-counting ball in one day, “It’s going to be hard, but hard doesn’t mean impossible.”

You’re growing. To Luke on his 7th birthday

And that’s what this life is all about, Luke. Never stop growing. Never stop learning new things or lose that amazing curiosity that propels your days.
